Ingredients:

Fresh Cilantro (chopped)

Black Beans

Brown Rice

Fresh Onion (chopped)

Mushrooms (sauteed)

Fresh Lime

Salsa

The Key to a good burrito is lots of fresh chopped cilantro. Black beans and brown rice are the foundation and you can pretty much add whatever you want depending on what you like. A standard ‘burrito’ size flour tortilla will hold about two cups of filling.

If you use the shredded beef, mix in a generous forkfull of green chiles.
